i have used leica total stations a number of times to set out jobs, however, the control station have always been provided e's,n's and hight, by a surveying company. my question is this, how do i go about setting up a station(s) (got the bit about knocking in a pk nail etc) but where do i go from there to establish co-ordinates, so that i can survey and set out the area??

You have to set out your control station from control stations where you know the e's,n's and heights. That is what you pay the survey company to do. You can then knock in the nail.
 
You can also assign arbitrary values to your set up station if you wish, say give it a value of E5000, N5000, RL 100 and pick a bearing on to some distant point like a edge of building or church spire.

With that set out your other control stations and do your normal checks.
