Temporary Thermocouple Installation in a Large Evaporative Cooler (PCDD/F Formation Prevention)

What would be the easiest way to obtain a detailed temperature profile of a 60 foot tall constant ID evaporative cooler? We are forming high levels of PCDD/PCDFs in an incineration process and need a quick, temporary and cheap way to measure the temperature every few feet along the inner surface of the post combustion zone, mainly the large evaporative cooler. Are there any good vendors that sell removable thermocouples for this kind of thing?
 
What temperature range are we looking at?
 
I will let to other people the task to identify thercouple suppliers.
A reasonably accurate way could also be to calculate by CFD + evaporation, using a Flluent of Fluent-like software, provided you know the spraying pattern of the evaporative cooler.

But I d like to get back to the basics.
If you make dioxins, its alsmost certainy because you do not cool quicly enough. You need a quench, with a high L/G ratio. But it may be too late.
And yes the temperatures are omportant. What is the temperature at inlet (of the cooler)
Do you, one way or another, cool the flue gas in a economizer, before you enter the evaporative cooler?
In incineration, the flue gas leaves the incinerator between 800 and 1250°C, but then passes through boilers, heat exchangers. You may have an ESP (known to generate dioxin, in a certain temerature window).
