A concave root under your conditions is normally due to lack of metal while the puddle cools. This can be caused by several things too much gap, too small of electrode(wire), land to thick, etc.
Due to very strict root form requirements for the root on our polymer piping we have over the years let the welders feather edge the weld prep. By using this procedure we get 99+ % satisfactory root passes using TIG. By using a feather edge prep it lets the welders use walking the cup torch handling to make a satisfactory weld. Actually now we use TIG for the root and hot pass on our heavy wall pipe.

Thanks for the update and I'm glad that you passed the test. Now all you have to do is practice until you can hang upside down by one leg all the shield producing an RT acceptable weld.
I think I understand what you are doing but a little word of caution for there my be problem with lack of fusion if you are not careful until you have a little more experience. If you have any problem just slow down a little bit and it should all come together.
Happy welding.
