Is there anything wrong (electronically) with using the 277 tap on a 208/240/277/380/460 primary, 24v secondary transformer to reduce the secondary voltage so it can be filtered with a cap to get closer to 24VDC? I know the VA rating will decrease, but will the transformer care physically?

As long as you are not exceeding the ratings of the transformer, I don't see any reason why it would care if you applied a lower voltage to a different tap on the input.

Nothing wrong in principle, just beware of labelling so when someone connects it to the 'correct' tap for the voltage they are using there isn't a big cloud of magic smoke.
