OK, go to...
Customer Defaults -> Gateway -> Visualization -> Color Palette
...and set the path for the Color Definition File to...
...\UGII\ugcolor.cdf.
Now this will only effect new part files which are created. If you wish to change an existing file, go to...
Preferences -> Visualization -> Color Palette
...and in the section titled 'Part CDF' select the 'File Open' dialog and browse to that same ...\UGII\color.cdf file and then making sure that under the 'Edit Background' button you have it set to 'Plain' and hit OK.
