Looking at creating and modifying existing user defined symbols. where can I find information on doing this?

We really recommend that you consider using Custom Symbols rather than User Defined Symbols since they are based on a very old approach which will probably not see any enhancements, whereas Custom Symbols are based on a more modern architecture.
