Using a transformer at lower voltages

I'd like to use a 15kVA an isolation transformer as an autotransformer to generate a neutral from a 240V source so I can run classic 120-N-120 loads.

Can I use a transformer with a 240/240 side? Seems I should be able to. Drawbacks?

It won't be 15kVA on 120/120. As long as the currents are within ratings, it should work electrically.

No idea what the "code" would say about it- someone later might see the 240/240 rating and get confused.

About every utility has at least one, if not 2-5.

At an isolation transformer, the electrically isolated load side becomes a separately derived neutral zone. If you use a 240 to 240 (without center tap) isolation transformer you need to have no 120 volt loads, and do something with neutral to earth (green wire) connection.
