How do you size wall ventilation and roof ridges to dissipate heat generated by respiration of stored product and insects, human activity, heat gain through roof, walls and floor as well as field heat from incoming stocks?

You might try the WW Grainger web site. I believe it is grainger.com. They have a lot of fans, blowers, and louvers in the catalog along with engineering charts.

there are standards for ventilation published in the ASHRAE codes - in the appendix. If not meet your situation- the rule of thumb is two complete air changes an hour- of course tempered ventilation is prefered in heating climates.
