Funny, this was the topic of my masters thesis many moons ago. I had to do this over a ham radio link (FSK modem with P-CSMA and encryption using an X.25 protocol hosted on a TI DSP platform). What is your encryption method? Is your problem with modulation or encryption?

Standard audio mixers will do this, if you have the right adapters. No need to build it if you can buy it cheaper. Back in the day when Radio Shack actually sold electronic gadgets, this would be easy. Now you might have to order it online.

Mathworks has great documentation online. There is an extensive set of self-study tutorials to teach you how to use the tool. Where you might struggle is learning how to simulate systems in your industry. That requires the school of hard knocks or a mentor with experience.
