Certain epoxy resins are less prone to degassing. EPON has good tech support that can help identify proper blends. Free samples for serious clients.
I do hand layups with glass/plywood/cypress. Tipping off the resin and vibrating the laminating table help.

Maybe you should look at www.touchcad.com. I used it for a strip plank 14 m catamaran. You will need a 2D/3D CAD package also. I have use VectorWorks for over 10 years.
Also perhaps it is your computer system that is not so easy. Use a Macintosh ... if your software investment will allow...
There is a program called TouchCad. It might be able to help. It creates and unfolds 3D shapes. It has the ability to map scanned information on to the shapes before unfolding. Perhaps by laying a "fiber image" on to the shapes and then unfolding it, would give a satisfactory result.
