How soon after concrete is poured should the burlap and soaker hoses be used for curing? The slab is quite large, 60'-0" x 90'-0" and the work is in Florida in summer.

As soon as possible. Essentially right after finishing.

and keep it damp... careful of wind causing it to dry out faster.

Thanks everyone.

One additional question. The contractor did get the burlap and soaker hoses on fairly early, but there is standing water on the slab see the attached photo. Should the intensity of the water be reduced so there is no standing water?

Thanks.

What are you talking about Willis??

If you can maintain a swimming pool above the slab, then do it! Water is bad during initial set, but as soon as we can get people to stand on it, it's game on! Super soaker time (IIRC rule of thumb is 1/8" depression boot print plus no standing bleed water in the depression as a rough guide to when to get the hoses fired up)

BTW that's a gorgeous curing setup. Only thing I'd say is you skip the burlap if you have full sprinkler coverage as it stains the concrete, which can be annoying.

Once the concrete has set up... standing water does no harm.

...and remember to saw cut it at the right time... very important...
