I understand there are different types of drawings,
but what are MIMIC drawings?

Used in plants that have a user interface and operators.

The only connection to Mimic drawings I can think of is rather old fashioned. You mentioned 'plant' and 'operators' and well before the days of PCs, and computer-controlled everything, the control rooms of large plants usually had a Mimic diagram of the main system process on a wall, or big panel.

The plant systems and processes would be represented by a series of connecting lines; set into this panel, on the appropriate line, would be the status indicator lamps, analog meters, alarm indicators, etc. to show the state of the plant at that position.

There's no reason today, even with fully automated control, that you can't still have a mimic diagram: power station electricity networks and railways still use them for 'the big picture' as it can be easier to take in, and better than what can comfortably seen on a single computer screen.

A mimic drawing would, I imagine, be a drawing of what you INTEND to use for a mimic panel as in the below image. I picked this example because it shows that even in the age of HMI screens, like the little one in this mimic panel, there is still value in that "big picture" view without having to be restricted to what you can fit on a monitor. Mimic panels can also be required as a backup to a monitor based HMI anyway.
