The only methodology I have seen used is to set up like an Excel spreadhseet with the trench or area profile and simply calcualte the volume. It's basically cubic volumes based on area and depths.

The actually only use spreadsheets in excel format. Unless you have a DTM, there is software that can calculate your volumes very accurate
