Where to verify (standard code) the Soft Iron Octagonal ring gasket material mechanical properties & chemical properties?

First of all you should to know the design requirements and then check them out with ASTM stds.

Gasket shall be as per ASME B16.20. But it gives only hardness value not given mechanical properties and Chemical composition requirements.

Basically, gasket is a mechanical element which objected to compression load rather than tensile.
Hence, the only important parameter is hardness.
Beside, as jose0012000 mention, you need to know design requirement and compliance against some standard.
