What is this valve?

Sirs,

Please tell me what type of valves are the two gray ones (picture attached)
Red tube is pressure
Blue are A and B for cylinder
Yellow is tank

The aachine consist of two oppoiste cylinders that are used to compact flux to be feed into another machine (an extruder press)

My guess is that they are preasure regulators to set the max working pressure of each cylinder

I would go along with that - might be a plug, but some sort of high pressure manual isolation valve.

If the line on the training square is parallel to the pipes: it is open
 
It is a Manual Shut off valve as you said.
It has a cylindrical plunger that goes up or down

 
A gate valve.

A high pressure gate valve for sure, but a gate valve.
