What is the best method for fastening the top plates to a rake wall? Toe nail? End nail? Simpson angles?

The components & cladding (lateral) reaction at the top of the tallest stud is 207 lbs (ASD).

Probably end nail. Run the numbers and see. I'd keep the side member as 1.5" despite the rake, but shorten embedment in the main member accordingly. Don't forget the end nailing factor. If you need a Simpson angle, 1) make sure field bending is allowed (usually reduces capacity on the connectors that allow it) and 2) install it from the other side. Have you ever tried driving a nail in an acute angle like that?
