Can't you make a tab in .psm, match the thickness to the height of your model's cross section and match length and width to the cross section's width and length of the profile. Then cut your tab lengthwise so you get your cross section and then bend the whole thing?

Did you create a .par or a .psm? It's easiest if you create a .psm, then switch to part and make your extrusions. You can then switch back to sheet metal.
The only way I know of transforming a .par to a sheet metal is by transforming it into a synchronous sheet metal.

OK, as for all those options: (view, assembly, helpers) you can go to your template files, open each one and in each one set all your desired view/assembly/helpers options. Close all files and save.
