Trane and Carrier publish short booklets on each aspect of HVAC design. I belive they are about $20 each. They are very brief and basic with pictures and very good simple explainations, Trane Heating and Cooling Load Load Estimation TRG-TRC002-EN is the one that goes over the basics of cooling and heating load calculations. Carrier has a similar set of traning booklets. Here is the link to the Trane manuals:


 
Here is another good reference for HVAC design - Carrier Handbook of Air Conditioning Design. I used it and referred to it whenever I was designing HVAC systems to keep me refreshed on the basic principals of HVAC - and to make sure I wasn't overlooking something in the design. It is presented very well and very easy to refer to quickly. I am not sure if it is still in publication but you can get a copy on Amazon or other places per link below.
