I am looking for the thermal conductivity values for 304 and 316 ss. Google was no help. Also need to know which meterial is more resistant to absorbing water vapor. This will be used in a vacuum oven up to 29 in/HG.

TIA

thanks for the tips to both...

I know I was ok with the vapor issue, just trying to be as optimal as possible. (maybe too picky) Energy consumption is going to be an issue with heating the ovens and the duration of vacuum pumping. This will be a mobile lab and will be running off batteries through an inverter.

Surface finish will be more important than the alloy. I have seen people use mechanically polished stainless for vacuum, this is wrong. You are better off not worrying about the overall roughness and electroplishing to remove microscopic features. The surface may look dull and spotty but it will not trap material on the surface.
316 dies have slightly lower TC.
